Slow Cooker Potato and Broccoli Soup

This recipe might seem odd for mid July, but I've been experimenting with slow cooker recipes, because the idea of turning my gas stove on, even with the air conditioner, isn't really appealing these days.  Besides, around here there's a good chance that there's going to be a thunder storm in the evening, so hot soup doesn't sound quite so bad!

I'd been missing potato soup.  I love the recipe that I have, but it's full of dairy products from cream cheese to butter to sour cream and while it is delicious it definitely isn't part of our dairy free diet.  Yesterday, I glanced around the kitchen, which was pretty bare since Paul was finishing up his paper and we hadn't had a chance to go shopping, and decided to put the potatoes we had to good use and come up with a new way to make potato soup.   I opened the freezer and saw a jar of homemade chicken stock and decided to get to work.

Have I mentioned that I love goat cheese.  I do.  Patrick isn't allergic to goat cheese and it allows me to pretend that I'm eating actual cream cheese once in a while.  And after five minutes of debating whether or not I wanted to use all of my remaining goat cheese on one recipe, I decided to go for it... and I'm definitely glad I did:

Ingredients

2.5 lbs potatoes
1 quart chicken stock
1 bunch of broccoli, cut up into bite sized pieces
3.5 oz goat cheese
1 onion, diced
2 tbs diced garlic
1.5 tsp garlic powder
1 tsp kosher salt

Instructions

Begin by peeling the potatoes and cutting them into quarters.  Place the potatoes and chicken stock in the slow cooker and turn the cooker on high.  Add the diced garlic, onions and broccoli.  Allow to cook for at least six hours.  Add goat cheese, garlic powder and mash. Cook for another 15-30 minutes (it should be done after 15 but will be okay if it goes longer) and serve!

I hope you enjoy it as much as we did!  Mae refused to try it (so her vote doesn't count) but Sadie and Paul both had second!

  1. Slow cooker dinner in the midst of the heat wave...Actually that sounds like an inspired idea that perhaps I should use.

  2. Sounds awesome! Yes, the heat is oppressive this time of year. Even with air conditioning, here in Texas we are melting! Mr. Golfer and I leave this weekend for a vacation
    ( yes you do get to take those after 34 years of practicing law) and it proves to be cooler in New Brunswick!

That is a brilliant recipe, and one that I will definitely try, albeit with "real" cream cheese rather than goat cheese. ;) My husband loves potato soup but I haven't found a good recipe yet...methinks this with a little crumbled bacon, chopped green onions, and melted cheese on top would be his idea of heaven! (And, to be fair, mine too....)

  4. I showed this recipe to my mom we both love potato soup but cannot eat the potato soup that my dad cooks because we are both in the no diary category, but we both can do goats cheese and milk. She said we would try it soon because we are in heat wave as well and don't like to use the stove a lot in the summer.

  5. This sounds marvelous! I've a dairy free child and thus a mostly dairy free household and this sounds so good!

    I second the idea of adding crumbled bacon and green onions.

    Anyone with a suggestion for a substitute for the broccoli? We have ONE family member who cannot eat broccoli.

    I hate cooking for this bunch, there are five people here and at least four different and not totally compatible dietary needs. A crock pot soup that minimizes the heat would be lovely.
